In 1968, Smt. Ramalakshmi opened a single counter in the heart of Nagercoil, selling banana chips fried in coconut oil and halwa stirred by hand for hours. People started lining up for the taste of home.

Her recipes were never written down — they were taught, palm-to-palm, to her sons, and then to theirs. The same kitchen still hums every morning at 4 a.m., the same brass kadai, the same patient flame.

Before the sun comes up, Nendran bananas arrive at our back door, still green, still firm. They are peeled, sliced paper-thin straight into a copper kadai of bubbling coconut oil, and lifted out the moment they turn that unmistakable amber gold.

Rock salt is dusted on while they are still hot. That is the whole recipe. The taste is in the patience.
