Why Nagercoil's snacks taste different

Nagercoil banana chips are made from Nendran — a starchier, sweeter cousin to the table banana. Fried in coconut oil from local groves, they are the colour of late-afternoon sun.

Tapioca, brought by Portuguese traders centuries ago, became a staple here long before it became fashionable. Our tapioca chips taste of that long history.

The sweets borrow from temple traditions — slow ghee, hand-pounded jaggery, cardamom from the hills. Nothing is rushed because the gods themselves were not in a hurry.
